Lemon Salmon Piccata
Ingredients
- 1 tbsp Butter
- 1 tbsp Olive Oil
- 4 Salmon Fillets
- 1 teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon minced Garlic
- ½ cup Chicken Broth
- Juice of 1 1/2 Lemon
- 3 tbsp Capers drained
- ½ cup Cooking Cream
Instructions
- Pat the salmon fillets dry and add salt and pepper on either side.
- Skin-side down, place the salmon fillets in a pan with heated butter and olive oil. After cooking for four to five minutes on each side, take them out of the pan.
- One minute after adding the garlic to the pan, mix in the lemon juice and capers. Bring the chicken broth to a rapid boil and simmer for five to six minutes, or until it has reduced by half.
- Replace the salmon fillets in the pan, check and adjust the seasoning, turn off the heat, and serve right away after adding the cream and letting it simmer for two minutes.
