I count it as a huge victory if I can give my family something they enjoy for supper that includes fresh veggies and protein! This chicken chow mein is quite flavorful and I adore how light and fresh it tastes. I usually double the recipe, per my husband’s request, so we have leftovers for lunch the following week. (Even better the next day, since Chinese food is one of those foods that keeps well in the microwave!)

  • Garlic: To give it the ideal savory flavor, add some freshly minced garlic.
  • Coleslaw Mix: For some crunch, get a package of shredded vegetable coleslaw mix.
  • Chow Mein Noodles: Prepare your chow mein noodles (you may use dried or chilled noodles). Cook them ahead of time as directed on the package.
  • Green Onions: For a burst of onion flavor, sprinkle some chopped green onions on top.
