Corned Beef Sandwich

Thick slices of corned beef stacked with all of your favorite toppings give this sandwich an abundance of flavor that makes it impossible to refuse. The winner is leftover corned meat!

Ingredients
  

  • 8 slices marbled rye or pumpernickel bread
  • ½ pound cooked corned beef  sliced
  • 4-8 slices swiss cheese
  • 2 cups coleslaw
  • ½ cup mayonnaise
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • pickles
  • thousand island dressing

Instructions
 

  • To construct, place one piece of bread with corned meat on it. Add one or two Swiss cheese slices. To melt, broil in the oven for one to two minutes.
  • Combine the coleslaw, mayonnaise, sugar, and lemon juice in a medium-sized bowl. Combine and cover with cheese. Top the other slice of bread with pickles and equally distribute the dressing.
