Turn on the oven to 450F. In -- a medium to large mixing bowl, whisk the eggs, milk, 2 Tablespoons of melted butter, salt, and sugar together. Gradually fold in the flour while mixing, but do not mix too much.
Grease the bottom of a 9- or 11-inch cast iron skillet with 1 tablespoon of melted butter. Transfer the mixture into a skillet and bake it for 12 to 18 minutes, or until the sides begin to become golden. Add chosen toppings on top.
