Yummy and Quick Vegetable Lo Mein
Feeling peckish but pressed for time? The solution is this simple 20-minute Easy vegetable lo mein! It’s a flavorful weekday supper or side dish for any of your other favorite Chinese dishes, and it only takes 20 minutes to prepare.
Compared to takeout, this easy vegetable lo mein is far superior. Making it is a no-brainer because it’s also quite easy to prepare! Now gather your preferred vegetables and let’s cook.
Ingredients
The appeal of cooking at home is that you can customize every dish to your taste. So feel free to add as many more veggies as you like, or taste and modify the sauce! The ingredients I used are listed below, and as always, the recipe card at the bottom of the post contains the precise measurements.
Ingredients List for Vegetable Lo Mein
- Noodles: For a more approachable option, you might use spaghetti or regular lo mein noodles.
- Vegetable Oil: Utilized to stir-fry noodles and vegetables. Here, any neutral cooking oil will do.
- Veggies: I combined carrots, snow peas, button mushrooms, bean sprouts, broccoli, and julienned red bell peppers. Give me every texture!
- Minced Garlic: Gives a flavorful foundation flavor to the veggie lo mein.
- Minced Ginger: Keeps everything vibrant and moderately salted.
- Sesame Seeds(Optional): Increase the nutty flavor and texture. For me, this is a must-add!
- Salt: Used to Enhance all flavors.
Ingredients List for Sauce
- Soy Sauce: The foundation of the veggie lo mein’s sauce. Both regular and low-sodium will work, but I suggest using the latter to prevent the food from being overly salty too quickly.
- Hoisin Sauce: Gives the sauce a depth of sweetness and umami.
- Sesame Oil: Keep those nutty flavors in mind!
- Brown Sugar: Adds just enough sweetness to counterbalance the savory flavors.
- Mirin or Rice Vinegar: Brings a tinge of acidity that enhances the overall flavor of the lo mein.

Cooking with a wok is so simple that you’ll wonder why you wasted so much money on takeout Chinese food. (Speaking from experience.)
For Vegetable Lo Mein
- Cook Noodles: As directed on the package, boil a big pot of water and cook the noodles. Pour through strainer and leave aside.
- Heat Oil: In a big skillet over medium-high heat, heat the oil.
- Sauté Vegetables: With the exception of the bean sprouts, add all the veggies. Simmer until soft, about 5 minutes.
- Add in Aromatics: Cook the garlic for one more minute after adding it.
- Combine: Add the bean sprouts, cooked noodles, and sauce, then toss to mix. Cook the noodles for 2 to 3 minutes, or until they are well warm.
- Serve: If preferred, add sesame seeds on top, and serve right away.
For Sauce
- Whisk Together: Combine all the ingredients in a small bowl and keep it away until you need it.

Easy Vegetable Lo Mein and Sauce

Vegetable Lo Mein
- 8 ounces uncooked lo mein noodles or spaghetti
- 1 tbsp vegetable oil
- 1 red bell pepper, julienned
- 1 medium carrot, julienned
- ½ cup snow peas
- 1 cup button mushrooms, cut in half or quartered
- 1 cup broccoli florets, bite-size
- 3 cloves garlic, minced
- ½-1 cup bean sprouts
- sesame seeds for garnish, if desired
- Salt to Taste
Sauce
- 3 tbsp soy sauce, regular or low sodium
- 1 tbsp hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon brown sugar
- 1 tbsp mirin, or rice vinegar
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, minced
Instructions
